In other news, I've been exploring Toronto as much as possible since moving here. I've tried dozens of restaurants already and am getting a better idea of this city in terms of its variety of food offererings. Understanding a city through its food is the ideal to really understood the core of a place: its origins, people, history. It's been great. Toronto really is the most multi-cultural area I have ever lived in.. even more so than New York! I wil be sharing some more of my experiences in a few, so stay tuned!

I have a horrible sweet tooth (it's apparent on my website: chocolateandcarrots.com) and I just love finding new ways to enjoy the sweet treats that I love, but making them a little bit better for me. Thank you for the giveaway! :-)
I think eating healthy means moderation in everything. You don't have to eat super healthy 100% of the time. Indulge a little but make sure to do so within moderation.
I agree with Erin. I recently lost 30 lbs. and would like to go another 6. I count calories and try to allow for a little treat each day. Just one bite of something delicious is enough to satisfy.
Unfortunately I am either completely healthy or fall off the wagon.
One aspect to healthy eating is having more veggies and whole grains on your plate than meat. I struggle with this because my husband is Mr. Meat and Potatoes and I adore all forms of bread {and sweets of course}! :)

What a great giveaway. I just discovered Caroline's blog a few weeks ago, and I just adore it... her photos are just gorgeous. I'd love to get my hands on her book. :)
Anyway, eating healthy for me is about finding ways to make healthy foods like fruits, veggies and legumes more appealing and delicious... that way, I don't feel like I'm depriving myself when I'm eating a good-for-me meal.
And when I do splurge, it's about picking the best quality splurge I can. Real cream, real butter, real chocolate.
Healthy eating to me means lots of vegetables and moderate indulgence.
I'm a snacker! I love to cook and eat, but I always end up eating chips right before dinner, or a bowl of cereal at 9 p.m. I try to make sure I eat a square meal at some point, but I always end up snacking.
I think it's necessary to have an open mind when it comes to eating healthy.
If you're not willing to try new things then how will you know if you like them? I love pretty much any fruit, vegetable, or whole grain food out there, but sometimes it's difficult to get my parents or other family members to even try a new food because it's deemed 'healthy.'
I think it's also difficult to maintain your healthy diet when eating out, but I usually try to order the healthiest food option, compromising and getting a dessert I love :)

Healthy eating to me means balance. I definitely struggle with that - with enjoying treats but not going overboard.
I bounce back and forth although with an 18 month old I want to do better eating healthy for all of us.
I LOVE eating healthy.. but I also love, cheese, bread and chocolate. So to me, eating healthy means eating the foods you want in moderation.
This cookbook sounds great!!!
My view on eating healthy is the same! It's all about eating whole foods and balancing the good with the bad. You can have dessert! Just don't have fried chicken for dinner. :p

Healthy eating, for me, means making almost everything from scratch. It's good because you know what is in your food and you are eating real food. The only struggle - chocolate and salty snacks late at night when I'm bored.
Eating healthy means understanding what your body needs to nourish it. The beauty of cooking is finding all the creative ways to satisfy your unique needs. One shouldn't have to incessantly count calories, but simply be mindful of how much fuel your body needs relative to how active your lifestyle is. My goal is to eat meals that are as well rounded as possible and to not worry about the occasional splurge to satisfy my sweet tooth.

Eating healthy means eating a well balanced diet and in moderation. I struggle with desserts and sweet things in general.
Eating healthy means a lot to me. My diet consists of watching calories, so I'm constantly aware of what I eat. My struggles consist of staying within my daily limit... and staying away from chocolate (my weakness!).
Baking for my son's restaurant and baking for my 9 grandchildren makes it extremely hard to eat correctly. I still try in between falling off the wagon. i'd love to win.
Healthy eating to me is about consuming whole, fresh foods when possible. For example, there are so many tomatoes and zucchinis in season right now, that I have been planning my entire week's meals around them! And trying new things ... we get so stuck on the foods we know, that it is hard to break into the wonderful and exotic world of different vegetable varieties.
However, I still am trying to overcome the challenge of my addiction to chocolate.
Being the main cook of a large family, I constantly strive to find healthy recipes that all 7 of us will eat. It's a nearly impossible task. But little by little, bit by bit, I've changed my cooking so that my children think they're eating the same old not-terribly-healthy food, but they're really eating something good for them. It's all about substitution and finding a balance. I dissect a recipe, increase the healthy ingredients and decrease or substitute the unhealthy ones (high sugar, fat, simple carbs). The trick is to do it slow and subtle enough that their tastes acclimatize to the newer food.
I can't take anyone who claims freedom from ever having struggled with eating in a healthy manner; it means either that they are liars or that they haven't ever met ice cream. That is my vice and the source of my struggle, that frozen perfection.
Eating healthy: eating a bit of everything natural. No need to go crazy about eating just specific foods (except when training for a special event ;) ). It's all about staying away from those filled with artificial ingredients and moderating your portions.

What a nice giveaway - thanks! As I've gotten older I really agree with 'moderation and balance is the key'. I truly enjoy food and don't think it's necessary to deprive myself to stay healthy.
I really strive to eat as healthy as I can but I cannot resist ice cream or frozen yogurt. I think it is worth it to splurge on delish yummies once in awhile! Being a viggie makes it easier most of the time, but not always!
It's definitely a challenge to be healthy when it's often more convenient to be unhealthy, so I try to prepare real food at home with fresh, local ingredients as often as I can. That way, I know what I'm putting in my body. Besides, it's cheaper and more fun than going out to dinner all the time! I usually don't bother making desserts low-calorie, though - I'd rather just eat less! Or spend a little more time at the gym :)

Eating healthy means knowing the right foods to eat, eating in moderation and being consistent. It is a struggle at times, but it is definitely something I strive towards. My undoing is sweets and carbs.
I've had quite the relationship with eating. I love food, but I've also struggled to not fall too far on to the extreme side of things. I'm a total perfectionist at times and have a hard time letting my body, rather than my mind, dictate food.
Healthy eating means finding that balance of foods that makes you feel great - full of energy, bright, and ready to go. If you can find that combination of foods, the rest of a healthy lifestyle comes more easily. How can you resist feeling great??
healthy eating for me means making from scratch and canning like crazy. My struggles... enough freezer space and having the time to fit it all in! I don't ever regret the results though.

Eating healthy means knowing what you are eating! When my hubby and I make meals at home, we know all of the ingredients that go into making that meal spectacular. When you go out... it is a mystery!
Eating healthy usually means not eating anything that is too processed and chemically. As a vegetarian, I stay almost entirely away from equally-bad, sodium-laden meat substitutes like Boca Burgers and such. Basically, whatever anyone is doing, I am cooking me some lentils :)
To me, healthy eating mean balance, not deprivation. I find eating healthier foods makes it easier to resist temptation, because my body is truly getting what it needs. Makes a little stray off the healthy path a lot shorter than it would be otherwise!

Moderation is the key to success! If you only eat carrots you will be sad but if you only eat cupcakes...well we know where that can lead. It's all about eating both (probably with more emphasis on the carrots) in a healthy way!

Eating healthy means eating food that is the least processed as possible! My main problem is that sometimes I fail to plan ahead and that makes eating healthy so difficult!
I love sweets. But for the sake of my health, and weight, I must start eating, and cooking in a more healthy manner. This book would help me do both.
