Snow Crab Rolls

Ask me any day of the week what I'd like to have for dinner and I'll probably ask for seafood. Whether it's steamed lobster drizzled with olive oil, lemon and salt, seared scallops on top of a velvety potato puree or clams tossed with al dente spaghetti and white wine, properly cooked seafood always makes the top of my list.
This week's recipe features sweet and meaty snow crab - a great alternative to lobster when cut into chunks and tossed with homemade mayo. It happened to be on sale at Whole Foods this weekend and I just couldn't resist coming home with a bagful. If this isn't an invitation to summer, I don't know what is!

Snow Crab RollsMakes 4 rolls

1/3 cup homemade mayonnaise (follow my basic recipe here)
1/4 cup chopped fresh cilantro
Pinch each salt and pepper
2 cups cooked, chopped snow crab
4 hotdog buns, grilled
1 tbsp butter
Small handful of pea shoots
Cornichons
Lemon wedges


In a small bowl, combine the mayonnaise,  cilantro, salt and pepper. Fold in the snow crab chunks.

In a small pan on medium high heat, melt the butter. Cut buns in half lengthwise almost all the way and place the pieces cut side-down in the pan, swirling to make sure the pieces absorb all the butter. Remove when lightly golden.

Fill buns with snow crab mixture and top with pea shoots. Serve with cornichons and lemon wedges. Enjoy!

Very nice take on a classic! We love seafood too but I've never made lobster or crab rolls at home

We are not fond of mayo, so I would probably go for some yogurt or another substitution, but other than that, pass me a couple of rolls!

SallyBR: I usually don't love mayo heavy dishes either but a little amount (when homemade!) really adds the perfect touch of creaminess to the crab. A drizzle of lemon, olive oil and salt will do the trick otherwise!

These look lovely! I'd usually rather have crab than lobster (we get better crab in the UK) so these are right up my street!

My mother always mixed the mayo with a little sour cream and I do too. We love lobster rolls and the crab looks just as good!
Those look like sweet potato fries too...yum!

Golly, I've never thought to do crab that way. Lobster rolls are a great favorite of mine though (butter toasted buns just evil). I love crab salad and must try it this way... brilliant pictures as always... yes perfect beginning to summer.
